Gila Sonoran Carne Asada

This flavorful Carne Asada is great on its own or to create delicious tacos and other great eats! For this we used a marinade with BBQ Salsa, then grilled a 2lb flank steak over mesquite chunks for a smoky tasty meat.


Marinades for carne asada may vary greatly throughout Latin America, and there is no real one “authentic” marinade. We use a simple marinade of oil, salt, pepper, and lime juice, along with our delicious Monsturo de Gila Sonoran Style BBQ Salsa.

  • 1 cup Monsturo de Gila Sonoran Style BBQ Salsa

  • ⅓ cup vegetable oil

  • 1 tbsp salt

  • 1 tbsp fresh ground black pepper

  • Juice of 1 large lime (about 2 oz)

  • lime juice

Once the marinade is mixed together, simply pour it over the steak in a large baking dish, bowl, or large zip-top bag and refrigerate for 2 to 4 hours.


Once your steak is marinated, grill the steak until done to your preference (we like it medium-rare), remove and let it rest for 5-10 minutes before cutting against the grain into chunks for serving.


Using some homemade white corn tortillas (thanks you tia Maria!) we filled our tacos with the grilled meat cilantro, white onion, and queso fresco (queso blanco). A squeeze of lime on top, and our tacos were so good, and so easy (we also recommend a cold crerveza).
