INGREDIENTS (2 servings):
Monstruo de Gila Sonoran Salsa
3 medium sized potatoes
1 bell pepper
1/2 of a large yellow onion
1 large clove of garlic
Bacon (or pulled pork)
6 eggs
Shredded cheese (Mexican blend or cheddar)
1 tbsp butter
Olive oil
Seasoning (salt, pepper, anything else you like- we used peach bourbon)
DIRECTIONS:
Prepare ingredients (dice potatoes, bell pepper, onion, mince garlic)
In a bowl toss potatoes with olive oil and seasoning
Air fry potatoes at 350°F 15-18 mins or until lightly browned and crispy
Cook bacon in a skillet over medium-high heat until crispy, turning often
Heat a drizzle of oil over medium-high heat and add bell pepper, onion, and garlic
Season and stir occasionally until tender and lightly browned
In a bowl, whisk eggs, seasoning, and a handful of cheese
Heat butter over medium heat and add egg mixture
Cook, stirring and scraping the bottom and sides of skillet until cooked through
Stir in veggies and add a layer of cheese, letting it melt slightly
Serve with potatoes, bacon, and a generous drizzle of Sonoran Salsa.
