Hatch BBQ Baked Beans


  • ½ yellow onion diced

  • 2 Hatch or Anaheim chiles (or green bell pepper for less spice) diced

  • 1 Tbsp Tomato Paste

  • 1 Bottle Monstruo De Gila New Mexico BBQ Salsa

  • 2 cans mixed chili beans

  • 1/2 cup vegetable stock

  • Small bunch of cilantro (Diced stems for cooking and leaves for garnish)

  • 2 Tbsp Vegetable Oil


  1. Heat vegetable oil on medium in dutch oven pot.

  2. Add Onion and cook until caramelized (about 10 mins).

  3. Add Chiles or Pepper and cook until soft.

  4. Add tomato paste, beans, BBQ salsa, Cilantro stems and Vegetable stock and cook for about 15-20 mins or until desired consistency. Make sure to stir regularly so the beans don’t burn on the bottom!

  5. Garnish with Cilantro leaves and serve.
